Whether you’re hosting a family feast or indulging in a quiet dinner, biryani never fails to impress. Let’s dive into crafting this culinary masterpiece at home.

Authentic Biryani Recipe

Ingredients:

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 4-5 cups water
  • 2 bay leaves
  • 3-4 cloves
  • 1 cinnamon stick
  • Salt to taste

For the Meat Marinade:

  • 500g chicken/mutton pieces
  • 1 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste

For the Masala:

  • 3 onions (sliced and fried until golden brown)
  • 2 tomatoes (chopped)
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 1 tsp cumin seeds
  • 3-4 green chilies (slit)
  • 1/2 cup milk with a pinch of saffron

For Garnishing:

  • Fried onions
  • Lemon wedges
  • Chopped coriander

Instructions:

  1. Cook the Rice:
Boil water with bay leaves, cloves, and cinnamon. Add soaked rice and cook until 70% done. Drain and set aside.
  2. Marinate the Meat:
Combine yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, and salt. Coat the meat and let it marinate for at least 2 hours (overnight for best results).
  3. Prepare the Masala:
Heat oil in a deep pot. Add cumin seeds, slit green chilies, and marinated meat. Cook until the meat is tender. Add tomatoes, mint, coriander, and half the fried onions.
  4. Layer the Biryani:
In the same pot, layer the partially cooked rice over the meat. Drizzle saffron milk, ghee, and top with remaining fried onions.
  5. Dum Cooking:
Seal the pot with a lid or dough and cook on low heat for 20-25 minutes.
  6. Serve:
Garnish with lemon wedges and coriander. Serve hot with raita or a side salad.
